Common mistakes

Weak Prerequisites

Cleaning, pest control and hygiene must be in place first.

Paper-Only Plans

Auditors check CCP monitoring records on the floor.

Too Many CCPs

Over-identifying CCPs makes the system unworkable.

No Verification

Calibration, validation and internal audits are often missed.

Quick Answers

Common questions about HACCP certification

HACCP (Hazard Analysis and Critical Control Point) is a food safety system that identifies biological, chemical and physical hazards and controls them at critical points. Certification confirms an independent body has audited your HACCP system, usually against the Codex Alimentarius General Principles of Food Hygiene.
Conduct a hazard analysis; determine critical control points; establish critical limits; establish monitoring; establish corrective actions; establish verification procedures; and establish documentation and record keeping.
FSSAI requires food businesses to follow hygiene and food safety practices, and licensed manufacturers to have a food safety management plan; HACCP certification itself is voluntary but widely expected by export buyers and retailers.
HACCP is the hazard control method; ISO 22000 wraps HACCP in a full management system with prerequisite programmes, management responsibility and continual improvement. Many businesses start with HACCP and move to ISO 22000 or FSSC 22000.
Usually 6 to 10 weeks, depending on how ready your prerequisite programmes and records are.
